Specific Heat: A number which shows how a substance changes temperature when it absorbs or radiates (gives off) heat energy.
Liquid water has a high specific heat (1.0), therefore water heats up slower and it also cools off slower.
Sand has a low specific heat, therefore beach sand can get scoring hot quickly during the day and it will also cool down quicker when the sun goes down.
